Pearl Diver

A lush, tropical escape in a glass, where every sip is as smooth as a sunset on the waves. Let this cocktail whisk you away to island vibes and endless summer nights!

What you will need:


Jigger or shot glass

Citrus Juicer

Cocktail shaker


Cocktail:

  • 1 1/2 oz aged column-still rum

  • 3/4 oz demerara rum

  • 3/4 oz Don’s Gardenia Mix

  • 3/4 oz fresh lime juice

  • 3/4 oz fresh orange juice


    Don’s Gardenia Mix:

  • 1 oz honey

  • 1 oz butter

  • 1 oz allspice dram

  • 1 oz vanilla syrup

  • 0.5 oz cinnamon syrup

  • Melt butter with honey, cool, then mix with other ingredients. Store in the fridge.


Garnishes:

  • Edible orchid, pineapple leaves


Directions:

  1. Make the Don’s Gardenia Mix: In a small saucepan add 1 oz honey and 1 oz butter, then let it cool.

  2. Add to a bottle then add in remaining ingredients: 1 oz allspice dram, 1 oz vanilla syrup and 0.5 oz cinnamon syrup. Store in the fridge until use.

  3. In a shaker combine: 1 1/2 oz aged column-still rum, 3/4 oz demerara rum, 3/4 oz Don’s Gardenia Mix, 3/4 oz fresh lime juice, 3/4 oz fresh orange juice

  4. Shake it up

  5. Add Crushed ice to a glass and pour in drink

  6. Garnish with edible orchid and pineapple leaf
